Summertime calls for frozen treats, and Whips Desserts delivers just that…with a twist. For the past six months, this family-owned confectionery has been fulfilling Folsom's sweet tooth with their unique take on what you could call the bread and butter of the dessert world: cake and ice cream. The bright, charismatic shop has over 20 flavors of cakes and pies from local bakeries Sweetcakes and Little Bliss Cakery, plus multiple flavors of ice cream. But here’s the kicker: Instead of picking just one type of treat, they have you choose a piece of cake or pie and a flavor of ice cream, then blend everything together to create what they call a “whip.” I was in need of something refreshing on my visit so I went with their Dreamsicle Whip: homemade orange cake mixed with vanilla ice cream. It tasted exactly like the Creamsicle bars I devoured as a kid and was a sweet reminder of summers past. My friend decided on one of the owner's favorites: the sugar-free Coconut Cream Pie with vanilla ice cream. Given that she devoured the entire thing, I'm going to assume she liked it. Gluten-intolerant individuals or those avoiding added sugar or dairy are in luck, too: There are numerous ice cream and pastry options that fit the bill. The saying may be “you can't have your cake and eat it too,” but over at Whips, you can most certainly eat your cake and have ice cream too.
