Berry Crazy: Blackberry Rolls Recipe

Don’t know what to do with that bucketload of fruit you got after going berry picking at Apple Hill? Turn it into something delicious! These blackberry rolls are simple, sweet, and hit the spot.

Ingredients
  • 1 1/2 cups sugar
  • 3/4 cup water
  • 1 Tbsp. lemon juice
  • 4 cups Apple Hill fresh picked blackberries

Shortcake Ingredients:
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup melted butter; divided
  • 2/3 cup milk
  • 1 teaspoon cinnamon

In a saucepan, heat water and dissolve the sugar in it. Remove from heat and stir in lemon juice. Pour into an 8x8x3-inch glass baking pan and add the berries over the top.

Make Shortcake:

In a bowl, mix together flour, baking powder, salt, and sugar. Make a well and pour in 1/3 cup melted butter and milk. Mix with a fork then your hands until liquid is incorporated. Form into a ball and place between two sheets of wax paper; flatten and roll to 1-inch thickness. Remove top wax paper and spread the remaining butter on dough and sprinkle with the cinnamon. Using the wax paper to lift the edge, roll the dough into a log shape. Cut the log into 1 and 1/2-inch slices and place on top of fruit-sugar mixture in pan spacing them about 1/2 inch apart. Bake at 450° for 20-25 minutes; fruit should be bubbly and shortcake nicely browned.
