Foodie Find: Fishology Poke Bar in Folsom

Fishology Poke Bar  //  Serving one of the latest cuisine crazes, poke (pronounced po-kay)—essentially a rice bowl topped with bite-sized pieces of fresh, marinated raw fish and add-ons of your choice—Fishology Poke Bar is a fast, healthy way to crush your sushi cravings. Think of it as Chipotle, in the sense that you watch your creation come to life and dictate exactly what you want in your meal, but without the post-gluttony guilt. On my last visit to the airy, light-filled, stylish space, I ordered a regular-sized bowl with half brown rice and half spring salad as the base (wonton chips and sushi rice are also available); salmon, ahi tuna and tofu for my proteins; and, to top it off, crab salad, mango, green onions, edamame, jalapeños, cucumbers and seaweed salad, with a saucy combo of spicy mayo, sesame shoyu and garlic ponzu. After a bit of mixing and mashing, it was time to dive into the colorful concoction. The balance of textures, temperatures (warm rice, cool fish) and spicy-sweet-salty goodness had my taste buds swimming in delight. Fishology also serves cold-pressed juices from local favorite Liquidology and giant macaron ice cream sandwiches in a rainbow of flavors…in case you needed two more reasons to poke your head in.
