For the Curried Falafel
- 1 tbsp. refined avocado oil or extra-virgin olive oil
- 1 onion, roughly chopped
- 2 cloves garlic
- 2 cups cooked chickpeas
- 1 tbsp. lemon juice
- 1 tbsp. curry powder
- 1/2 tsp. sea salt
- 1/2 cup chickpea flour
For the Dressing
- 3 tbsp. tahini
- 2 tbsp. lemon juice
- 2 tbsp. water
- 1 tbsp. maple syrup
- 1 tbsp. nutritional yeast
- 2 tsp. curry powder
- 1/2 tsp. sea salt
- Ground black pepper, to taste
For the Kale Salad
- 1/2 bunch (4–5 cups) kale, de-stemmed and torn into bite-sized pieces
- 1 large carrot, julienned or grated
- 1 regular cucumber, peeled and diced
Make the Dressing: In a small bowl, whisk together all ingredients.
Make the Kale Salad: In a large salad bowl, massage kale until bright green and tender. Add carrots, cucumber, and dressing; toss to combine.
To Serve: Add a bed of salad to bowls; top with a few falafel.
