Q: What is the difference between cake flour and all-purpose flour, and how does using either of them affect the texture of a cake?

A: Cake flour is used for baking, since it’s a soft wheat flour with a finer texture compared to regular all-purpose flour. All-purpose flour is a blend of soft wheat and hard wheat flour; therefore, it can be used in most recipes. Cakes baked with cake flour are more tender (than those made with all-purpose flour) because they contain the least amount of gluten, making the cakes taller and lighter.
