Summer Recipe: Flower Farm Café’s Strawberry Patch Salad
Add the following ingredients to a large bowl:
-5 cups mixed greens
-2 cups fresh strawberries, sliced
-1 small pack feta cheese
-2 small watermelon radishes, sliced (optional)
-2 tbsp. dried cranberries and pumpkin seeds
Raspberry Vinaigrette Dressing:
-1.5 cups fresh raspberries
-1 shallot, chopped
-3 tbsp. rice wine vinegar
-1-2 tbsp. sugar
-1/2 cup extra virgin olive oil
Dressing Directions:
Simmer raspberries, shallots, rice wine vinegar, and sugar in a small pot on low heat until liquid is reduced. Once the liquid is cool, pour into a food processor and blend until smooth; then strain through a sieve. Add olive oil once the dressing is fully blended.
Toss salad in dressing just before serving. Extra dressing should be stored in the refrigerator.
