In this classic agua fresca (fresh water) drink, rice and cinnamon sticks are soaked then blended and strained. Mixed with a hint of vanilla and sweetened condensed milk then poured over ice, it’s a rich, creamy, and cooling concoction that’s perfect alongside one of La Rosa Blanca’s mouthwatering Mexican dishes.

FLB’s Ruby Red
$6.75 at Wally’s Pizza Bar, 4079 Cameron Park Lane, Cameron Park, 530-677-5205, wallyspizzabar.com

FLB’s Ruby Red

Pineapple and grapefruit juice add a fruity pop of red to the tingling citrus of Finlandia Grapefruit Vodka—the boozy component in this sweet drink from Wally’s Pizza Bar. Sweet & sour mix and a sugar rim complete the dangerously delicious cocktail.

Baby Shark
$50 at *Friends With Benedicts Mimosa House, 2201 Francisco Drive, Suite 110, El Dorado Hills, 916-936-4830, friendswithbenedictsinc.com

Baby Shark

There’s nothing babyish about this super-sized beverage for two. Filled with an adventurous mixture of vodka, fizzy champagne, lemonade, and blue curaçao, with a gummy shark and raspberry rim, it’s almost too stunning to sip.
*New location coming soon to Folsom (310 Palladio Parkway, Suite 713)

Cherry’s Glee
$7 at Bennett’s Kitchen Bar Market, 1595 Eureka Road, Roseville, 916-750-5150, bennettskitchen.com

The hunt for summer’s perfect mocktail ends here. Refreshing lemonade and sparkling water are mixed with house-made sweet and sour (fresh-squeezed lemons and simple syrup) and muddled Italian cherries in this flavor-packed, non-alcoholic alternative from Bennett’s Kitchen Bar Market.

Gekkeikan Nigori Sake
$13.50 at Fat’s Asia Bistro, 2585 Iron Point Road, Folsom, 916-983-1133; 1500 Eureka Road, Roseville, 916-787-3287, fatsasiabistro.com

Nigori is generally the sweetest of sake varieties, and Gekkeikan’s medium-bodied version does this beautifully with subtle notes of honey and tropical fruit. Characterized by its milky appearance—for which it gets its moniker nigori, meaning cloudy—it has a delightfully creamy texture and is chilled for max refreshment.

Electric Berry Dutch Soda
$2.65+ at Dutch Bros Coffee, local locations in Folsom, Granite Bay, Roseville, and Rocklin; 541-955-4700, dutchbros.com

Ice cold and bubbly, the Electric Berry Dutch Soda from Dutch Bros Coffee is made of sparkling soda water, supercharged with lime and blue raspberry, then topped off with whipping cream. Add heavy cream for the French soda experience or opt to have yours blended for extra chill.

Coconut Vacation
$14 at La Provence Restaurant & Terrace, 110 Diamond Creek Place, Roseville, 916-789-2002, laprovenceroseville.com

Piña coladas are so passé. Instead, escape to island time with this aptly named, super coconutty cocktail that’s made with CÎROC Coconut Vodka, Coco Reàl Cream of Coconut, fresh-squeezed lime juice, and club soda. A little sweet and super refreshing, this frothy concoction screams summer and would be perfect poolside—or on La Provence’s idyllic patio.

Blue Capri Beach
$10, at Visconti’s Ristorante, 2700 East Bidwell Street, Suite 700, Folsom, 916-983-5181, viscontisristorante.com

Imbibing on this blue-hued beverage will transport you to the beautiful blue beaches of Capri. Vodka, blue curaçao (pronounced cure-ah-sow), and a dash of dry vermouth—with the option to add a splash of grenadine—complete the simple, and simply sensational, summertime sipper.
