Collin Fat is a man who loves his job.

He is Sacramento restaurant icon Frank Fat’s first grandson. At age 11, he started his restaurant career in various Fat properties, working his way up from back kitchen work into the dining room as a busboy and a waiter, and eventually as a restaurant manager. While learning the ropes of the restaurant business, he also managed to attend UCLA, and earned a masters degree in hotel restaurant management from Cornell. Today Fat serves as the chief operations officer of the Fat empire, no pun intended. “I love what I do, and I love the people I work with,” he shares. “The restaurant business is a people business, and I work with some of the greatest.”

The flagship of the Fat restaurant empire is, of course, Frank Fat’s at 806 L Street in Sacramento. “Frank Fat’s is celebrating its 70th anniversary this year!” he says proudly. “There are not many restaurants that have been around and in the same family that long.” The local Fat’s Asia Bistro and Dim Sum Bar at 1500 Eureka Road in Roseville (and at 2585 Iron Point Road in Folsom) shares the heritage and same sense of quality with the original kitchen – every meal is a celebration.
