• These days, few have heard of “Papillon;” in French it translates to “butterfly.” More often, wine people who search out boutique wines know it as Dave Phinney’s, Orin Swift Cellars, newest creation. This distinct label with a photo of tattooed knuckles evokes the same edgy, dark and sinister feeling of his other well–regarded wine, “The Prisoner.”
“Dark and sinister” is not only the evocation from the Greg Gorman photo on the label, but are the characteristics of this brooding little number. This year’s inaugural release is a true Bordeaux-style blend. This is one dense, powerful wine. The aroma starts off with cedery notes but once out, it explodes with dark chocolate and earthy flavors. In the mouth, it has black fruit, currant and cherry, cocoa and spice. The wine finishes with smooth but well-structured tannins. All the flavors hold up well past being in your mouth, without the bitterness. It drinks great now and will rock your world with a little time.
