Mario’s Early Toast in Folsom

One of the more impressive inventions by human beings in the last few millennia, in my humble opinion, is breakfast. I don’t know exactly how our ancient ancestors did it, those intrepid culinary pioneers of yesteryear, but I’m so very proud and grateful. Can you imagine what life was like before breakfast existed? I can’t. So let’s all offer a shout-out (or just a wistful nod of gratitude) to our distant relatives who came up with the most important meal of the day.
One of the finest local purveyors of the morning meal is Mario’s Early Toast, which offers up a diverse and extensive menu of both time-tested dishes and delicious new creations (not to mention more than a dozen mimosa variations and an impressive lunch menu, too). I’ve been there a few times with my family, and it’s definitely a spot to put on your regular rotation.
During our last dine at Early Toast, we chowed down on five different dishes: a massive blueberry Belgian waffle for my nephew, perfectly golden on the outside and served with plenty of maple syrup; a classic American assortment of fluffy scrambled eggs, crisp and succulent bacon, juicy chicken-apple sausage and pan-fried hash browns for me; a “Perfecto” omelet for Pops, which featured three fluffy eggs packed with bacon, baby spinach, mushrooms, onions, jack cheese and cream cheese; a “Folsom-style” omelet for Mom with cheese, sausage, bacon, ham, bell peppers, onions and mushrooms, topped with sour cream, tomatoes and chives; and a country benedict for my brother, a hybrid dish that paired biscuits and gravy with eggs benedict (I tried it, and it was amazing). I think it’s actually impossible to go wrong here.
We all know that the most important things in life are family, breakfast and mimosas; and while we can’t necessarily choose our family, we can certainly choose our breakfast and mimosas. I know my choice for the best in these two arenas! •
